He invented single-shot espresso in the early years of the 20th century while looking for a method of quickly brewing coffee directly into the cup.

In the early years of the 20th century he invented the single-shot espresso machine, introducing many improvements that are still in use today: the portafilter, multiple brew heads and a large boiler to have a large reserve of hot water to brew.

Unfortunately, Moriondo’s machine was lost to history, but Luigi Bezzerra and Desiderio Pavoni (considered now as “the Steve Wozniak and Steve Jobs of espresso”) took Moriondo’s design and improved it, eventually developing the first single-shot espresso, which only took a few seconds to brew.

Luigi Bezzerra, was the know-how. He created the single-shot espresso while also looking for a way to quickly brew coffee straight into the cup. The early machines could produce up to 1,000 cups of coffee per hour. When the coffee was made it also did not have great side effects.

In the early 1900s, Bezzera invented what is known as the single-shot espresso. Think about that the next time you’re at Starbucks and order a single shot. Bezzerra’s original machine consisted of a large boiler with built-in chambers filled with water that lowered the water temperate from the original 250˚ F to 195˚ F.
