Jul 28, 2008 · Trimmings are just that, trimmings. If you were to go to a decent butcher shop or meat dept at a grocery store that does their own cutting and wrapping, they'll have trimmings for you. At least around here they do. Just advise them you want pork trim for making sausage. Last trimmngs I bought were 1.10$ and they were just that, basic fat trimmings.

Dec 31, 2020 · Pork butt is 20-30% fat, depending on whether you buy a fatty or lean butt. so it is already 70/30 roughly. The added fat is to make up for the lean venison. If you are adding 7# of venison, then you need 3# of fat. 1# of fat will give you 12.5% fat with the lean venison.

Plus they will take any marinade you can think of and are great on the Grill. I just made Chinese BBQ Ribs, 2 racks, and had enough Rib Tip meat for a Dozen Roast Pork Egg Rolls and 2 Qt's of Pork Fried Rice!

Jul 13, 2009 · I Save all my trimmings. From whole pork loins, spare ribs, Beef rib roasts, etc. And you can refreeze meat. Sausage makers buy meat in bulk to get a better price , freeze it till needed, grind it make sausage then you take it home and freeze it. I 'll take out a chunk of venison make burgers and then refreeze the patties with no ill effects.
