Using tables for determining proper process times. This set of guides (i.e., the USDA Complete Guide to Home Canning) includes processing times with elevation adjustments for each product. Process times for ½-pint and pint jars are the same, as are times for 1-½ pint and quart jars.
Do not increase processing time. Choose slightly immature veggies over overripe ones. Best if canned right after pick-ing. Avoid bruising, as spoilage organisms grow more rapidly on bruised veggies. Nov 13, 2023 · The altitude adjustment for canning in a water bath canner simply involves extra processing time. Increase processing time by 1 minute for each 1,000 feet of additional altitude above 1,000 feet, or use the chart below.
Foods that have been pre-cooked are already hot when they go into the canner; "Raw packed" means the food is raw when it's packed in the jars. Pickles and other foods that easily become soft or soggy go into the canner uncooked.
