Nov 21, 2022 · To preserve stock/broth safely you will need to use a pressure canner. This method of food preservation is used because the food item is meat-based and low in acidity. I'm not aware of any other method to make stock/broth shelf stable & meet food safety guidelines. Your options are to either pressure can or to freeze.

I just didn't have room in the canner to do all the jars in 1 batch, so it went in the fridge instead. After the left-hand was canned, the broth turned clear as well. Aug 26, 2010 · Botulism spores don't die at 212F, the boiling point of water. A pressure canner boiling water at 15PSI raises the boiling point to 250F or so which will kill the spores. The bacterium cannot grow in a high acid environment and so high-acid foods such as fruit and pickles do not need to be processed in a pressure canner.

Jun 5, 2018 · A pressure cooker is a fantastic way of saving both time and energy. I've used mine to succesfully make both chicken stock and bone broth. The major advantage I've found is the way the gelatin etc. is extracted only after a few hours. As far as nutrients and taste as concerned, I'd say a PC is the way to go.

The only two anomalies were that I had taken the jars out relatively soon after the pressure allowed (instead of letting them cool longer in the canner), and I accidentally let the pressure rise to 15 lbs before I was able to lower it to 10. 25 out of 26 jars ended up with a proper seal once fully cooled.
