I'm interested in doing the 2 day trip. Do they set up the tents or do you bring your own gear and pick a spot ?

You have to bring your own gear and pick your own spot. (It's easy to camp on those gravel islands.) They aren't guides---just rent the boats, paddles, and pfd's.
I’m planning on doing a day trip...their website estimates 6 hours...are their kayaks that they rent equipped with seat backs? If not do their kayaks have the necesssary hooks so I can attach my own seat cushion and back rest?

Yes. The kayaks have seat backs and are very comfortable. Sorry, can’t speak to hooks. But the water is calm, so you could just stick any padding in there without risk of losing it. Enjoy!
