Hi, Cornishlady, I was in Cyprus in October and November, so I can't say what the weather is like in January, but in October and November it was nice. Not scorching hot, but warm enough to enjoy swimming in the ocean. Windy some days but not too crazy. Cool in the mountains (though Famagusta is at sea level, so no problem there). Food prices are relative, of course, so I'd say eating out in Cyprus is more expensive than Jordan, but cheaper than France. Also, it depends on whether you eat locally or in upscale restaurants... Getting there by car is a bit tricky, as the access road is really uneven and you need to find your way through a residential area first. If you drive in a rental car be really careful... We scuba dived from there fall 2018, and saw several cruise boats come very close to the coast; I assume to see the cave from afar as well as the underwater "architecture" (beautiful rock formations). I hope this at least partly answers your question...
